Coconut Curry Shrimp
Ingredients 1 Can coconut milk unsweetened/ powder 1 Tablespoon curry powder 2 Cloves of Garlic Salt and freshly ground pepper for taste ginger *optional* Dry Parsley Onion Green or Red bell Peppers 1 Pack of large shrimp Directions 1.In a large bowl , pour a pack of shrimp. Rinse thoroughly other lukewarm water then rest to drain. 2. After which you season the Shrimp with curry powder, onions, bell pepper, garlic, salt , pepper and ginger . Place aside for 5 - 10 mins. 3. Over medium heat bring to bowl the coconut milk / powder. Simmer until slightly reduce or thicken 5-7 mins. 4. Then add the seasoned shrimp and cover , leave to cook for 12 - 15 mins. *served with coconut rice or any rice of your choice*
Chicken Chop Suey
Ingredients: 1 Pound Chicken breast (washed and diced) Pak Choy ( 3 stalks) 1 Medium Onion 1 Large Bell Pepper Soy Sauce 1 Large Carrot Salt and Ground Pepper 1 Clove Diced Garlic Vegetable Oil Directions: 1. Combine chicken breast, salt, pepper, garlic and soy sauce in a bowl and rest aside. 2. Heat 2 tablespoons of oil in a large skillet over medium heat. 3. Add chicken to oil and stir until chicken is tender. 4. Add carrots, sweet pepper and onion. 5. Saute for 5 minutes then add pak choy. Leave for another 5 minutes. Serve with Rice
Strawberry and bacon Salad
Ingredients: 4 Strawberries (sliced) Bacon (diced) Fresh Lettuce Vegetable or Olive Oil Directions: 1. Heat oil over medium heat then add diced bacon. 2. Remove bacon from oil and place o napkin to absorb excess oil. 3. In a salad bowl add lettuce, bacon and strawberries 4. Toss salad
